Paleo Coffee Cake



Savor the mouthwatering flavors of a Paleo coffee cake that is made with healthy ingredients. You can have this coffee cake for breakfast or any time of day as a sweet treat. It is flavorful, dairy-free, and free of grains!

Ingredients:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/2 cup coconut sugar
  • 1/4 cup ghee, melted
  • 3 eggs
  • 1/4 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup chopped pecans optional, for topping

Instructions:

Set the oven to 350 degrees Fahrenheit 175 degrees Celsius and coat an 8 by 8-inch baking dish with coconut oil

Mix together almond flour, coconut flour, coconut sugar, ghee, eggs, almond milk, baking soda, ground cinnamon, and salt in a large mixing bowl

Blend the batter until it's smooth and evenly distributed

Distribute the batter evenly in the baking dish that has been greased

If you want a crunchy topping, you can add chopped pecans to the batter

A toothpick inserted in the center should come out clean after baking for 25 to 30 minutes in a preheated oven

Before slicing and serving, take the coffee cake out of the oven and allow it to cool for a few minutes
