These chili fries are the best comfort food ever! On top of crispy fries is a hearty and tasty vegan chili. These fries are great for a meal or a snack on game day.
Ingredients:
- 1 lb frozen French fries
- 1 can 15 oz black beans, drained and rinsed
- 1 can 15 oz diced tomatoes
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 2 tbsp chili powder
- 1 tbsp cumin
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup vegetable broth
- 1 tbsp olive oil
- Optional toppings: vegan cheese, avocado, cilantro, green onions
Instructions:
Preheat the oven and cook the fries according to package instructions
In a large skillet, heat the olive oil over medium heat
Add the onion, bell pepper, and garlic
Cook until softened, about 5 minutes
Stir in the chili powder, cumin, smoked paprika, salt, and black pepper
Add the black beans, diced tomatoes, and vegetable broth
Bring to a simmer and cook for 10 minutes
To assemble, place the cooked fries on a plate
Top with the chili mixture
