A delicious and hearty lentil salad with the sweetness of caramelized tomatoes and the creamy richness of Brie cheese. Perfect for a light lunch or a side dish at dinner.
Ingredients:
- 1 cup green lentils, cooked
- 1 pint cherry tomatoes, halved
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
- 200g Brie cheese, cut into small cubes
- 1/4 cup fresh basil, chopped
- 1/4 cup red onion, finely diced
- 2 cloves garlic, minced
Instructions:
Heat the olive oil in a skillet over medium heat
Cook the cherry tomatoes until they become caramelized by adding the garlic and a small pinch of salt
Cooked lentils, caramelized tomatoes, Brie cheese, basil, and red onion should all be combined in a big bowl
To make the dressing, combine the olive oil, salt, pepper, and balsamic vinegar in a small bowl
After adding the dressing to the lentil mixture, gently toss to mix
The lentil salad can be served cold or room temperature
If desired, garnish with extra basil leaves
